Summer heat reduces appetite, therefore a simple, tasty food is recommended. Thus, prawns and squid are ideal.
Ameera Aboulseoud, an Egyptian culinary blogger, made a superb prawn Hyderabadi biryani.
Shrimp Hyderabadi biryani recipe:
First, obtain washed and peeled prawns. Salt and turmeric the prawns for 30 minutes.
Golden-fry chopped onions in a pan. Next, remove the onions.
Add bay leaves, star anise, minced garlic, ginger, tomatoes, and chilli to the pan. Mix everything on low heat until thickened.
Add yoghurt, cumin, chilli powder, coriander powder, and salt. Add prawns and stir for 7 minutes before turning off the heat.
Soak Basmati rice for 30 minutes before draining.
After draining, add the rice to 3 cups of boiling water with salt and a few drops of oil. Keep rice at 1/3 water to avoid overcooking.
After 15 minutes, strain the rice.
Next, put some rice, prawns, caramelised onions, green coriander and mint in a saucepan and cover it with ghee. Repeat with the remaining ingredients.
A modest cup of saffron-infused boiling water enhances rice.
Cover the saucepan with aluminium foil afterward.
Serve them after 10 minutes on low heat.
